  • 2 3/8 cups flour
  • 1/2 teaspoon baking powder
  • salt
  • 1 1/2 cups muscovado sugar if not available, use brown sugar
  • 1 egg
  • 5/8 cup low fat cream cheese
  • 1 mashed banana drizzled with lime
  • 1 lime zest and juice

    Preheat oven to 400 degrees Fahrenheit.

    In a large bowl, mix the flour with the baking powder, salt and sugar.

    Make a well in the center and pour the egg and cream cheese. Mix and add the mashed banana drizzled with the lime juice and half of the lemon zest.

    Pour the mixture into a mold greased with a little butter.

    Bake the cake for 40 to 45 minutes.

    As soon as the cake is cool, sprinkle it with the remaining zest and if you want with icing sugar .
