  • 1/4 c. butter or margarine
  • 1/2 c. packed brown sugar
  • 1 egg
  • 1/2 tsp. vanilla
  • 1/2 c. mashed banana (1 large or 1 1/2 medium)
  • 1/3 c. apricot jam (orange marmalade will do too)
  • 1 c. flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 c. chopped walnuts (can use almonds)
  • 1 tsp. lemon juice
  • 1/4 c. strained apricot jam (or marmalade)
  • 1/4 c. crushed walnuts (or almonds)

Directions

    Cream butter with sugar. Add egg and vanilla and beat until fluffy. Stir in banana and jam. Measure in flour, baking powder, salt, nuts and lemon juice. Spread into a greased 9 x 9-inch pan. Bake in 350° oven for 25 to 30 minutes. Remove from oven. Spread with strained jam. Sprinkle the crushed nuts over. Cut when cool into 36 squares.
