Ingredients: 2-1/4 cups flour; 1 Tablespoon baking powder; 1/2 teaspoon salt; 1 cup sugar; 1-1/4 cup butter, softened; 1 egg; 2 ripe bananas; 2 Tablespoons orange or lemon zest; 1/2 cup milk; (add 1 cup of nuts or chocolate chips if desired)

Using a mixer, combine the sugar and butter until well blended; then mix in the egg. Add the bananas, milk and zest, mix well. Slowly add the dry ingredients and beat until smooth.
