Banana Bread

Ingredients

  • 1 cup Sugar
  • 1/2 cups Crisco (shortening, NOT Margarine)
  • 2 whole Eggs
  • 1-1/4 cup Mashed Bananas (3-4 Overly Ripe Bananas Depending On Size)
  • 1-1/4 cup Flour
  • 1/2 teaspoons Salt
  • 1 teaspoon Baking Soda

Directions

    Combine the sugar and the shortening. Then add the eggs; next the bananas.

    Combine the dry ingredients in a separate bowl and mix them together. Mix them into the wet ingredients. This batter looks VERY wet. You will think you are missing a cup of flour at the least. You aren't. It's fine.

    Bake for 1 hour at 350° if making one large loaf. It will likely only be 40-45 minutes if making two small loaves, which is what I like to do. Do the toothpick test and enjoy!
