- 1 1/2 c. all-purpose flour
- 1/2 c. sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. wheat germ
- 3 medium very ripe bananas, mashed (1 c.)
- 1/4 c. buttermilk
- 1/4 c. oil
- 4 egg whites
Directions

1Sift together flour, sugar, baking powder, baking soda and salt.

2Mix in wheat germ.

3Add all remaining ingredients and beat well.

4Place in an oiled 8 x 4-inch loaf pan.

5Bake at 350° for about 1 hour or until done.

6Yields 1 loaf (16 slices), approximately 130 calories per serving (1 slice).
