Banana-Bread Pudding

  • 2 eggs or 1/2 c. egg substitute
  • 2 egg whites
  • 1 c. skim milk
  • 4 Tbsp. brown sugar or honey
  • 1/4 tsp. grated nutmeg
  • 1/4 tsp. ground cinnamon
  • 3 slices whole wheat bread, diced
  • 4 very ripe bananas, mashed
  • grated lemon rind (optional)

Directions

    In a large bowl whisk together the eggs and egg white until well blended.

    Add the milk, sugar or honey, nutmeg and cinnamon. Add the bread and let stand for 5 minutes.

    Add the bananas. Coat a 1 to 1 1/2-quart casserole with nonstick spray.

    Add the bread mixture.

    Place the dish in a larger baking pan and add enough hot water to come halfway up the sides of the inside pan. Bake at 350° for 50 minutes.

    Remove the casserole dish from the water and allow to cool on a wire rack for 10 to 15 minutes. Serve sprinkled with lemon rind.
