- 4 ounces peanut brittle
- 4 firm bananas
- 23 cup packed brown sugar
- 14 cup butter
- 2 tablespoons lemon juice
- 2 tablespoons dark rum (optional or can sub 1/8 tsp rum extract)
- 2 tablespoons water
- 4 cups vanilla ice cream
Directions

1In blender or food processor, coarsely chop peanut brittle.

2Cut bananas in half crosswise, then lengthwise.

3In large skillet, combine sugar, butter, lemon juice, rum and water; bring to boil over medium heat.

4Add bananas, gently turning to coat.

5Reduce heat and simmer, spooning sauce over bananas, for 2 to 3 minutes or until heated through but still firm.

6Spoon ice cream into chilled bowls; top with banana mixture.

7Sprinkle with peanut brittle.
