Banana Cake

  • 2 1/2 c. cake flour
  • 1 1/4 tsp. baking powder
  • 1 tsp. salt
  • 2/3 c. shortening
  • 2 eggs
  • 2/3 c. chopped nuts
  • 1 2/3 c. white sugar
  • 1 1/4 tsp. baking soda
  • 1 1/4 c. mashed bananas
  • 2/3 c. buttermilk

Directions

    Mix dry ingredients in small bowl; set aside (except sugar). Cream shortening and sugar.

    Add eggs and mashed bananas until mixed, then add buttermilk, dry ingredients and nutmeats.

    Beat until well mixed; pour into a greased and floured 9 x 13-inch pan. Bake at 350° until inserted toothpick comes out dry.

    Top with favorite frosting (my family likes it with peanut butter).
