- 2 1/2 c. all-purpose flour
- 1 1/2 c. sugar
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 1 c. mashed ripe bananas
- 2 eggs
- 1 tsp. vanilla
- 1 tsp. baking soda
- 1/2 c. shortening
- 2/3 c. buttermilk or sour milk
Directions

1Grease and lightly flour two 9 x 1 1/2-inch round baking pans. In a mixing bowl, combine the first 5 ingredients.

2Add shortening and bananas; beat on low speed of electric mixer until combined.

3Add buttermilk or sour milk, eggs and vanilla; beat 2 minutes on medium speed.

4Turn batter into prepared pans.

5Bake in a 350° oven for 30 minutes, or until done.

6Cool 10 minutes on wire racks.

7Remove from pans; cool thoroughly.

8Frost with creamy butter frosting.

9Makes 12 servings.
