Banana Carrot Bread

Ingredients
- 1 c. mashed bananas
- 1 c. sugar
- 3/4 c. salad oil
- 2 eggs
- 2 c. sifted all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1 c. finely grated carrots
- 1/2 c. nuts or pecans
Directions

1Combine bananas, sugar, oil and eggs in large bowl.

2Beat with electric mixer 2 minutes (or 300 strokes by hand).

3Sift together flour, soda, salt and cinnamon.

4Fold into banana mixture.

5Stir in carrots and nuts.

6Stir into greased and floured 9 x 5 x 2 1/2-inch pan.

7Bake at 350° for 55 to 60 minutes.

8Cool in pan 10 minutes.

9Remove from pan and cool on rack.

10Wrap and store overnight before cutting.

11May substitute zucchini for carrots.
