- 1 c. cake flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 3 eggs
- 1 c. sugar
- 1/2 c. mashed bananas
- 1 tsp. lemon peel
- 1 Tbsp. lemon juice
- confectioners sugar
- 4 1/2 oz. Cool Whip
- 2 small bananas
Directions

1Sift flour, baking powder and salt; set aside.

2Beat eggs (room temperature) until foamy; add sugar gradually.

3Stir in flour, 1/2 cup mashed bananas, lemon peel and lemon juice.

4Line jelly roll pan with wax paper and grease.

5Bake 12 to 15 minutes at 375°.

6Sprinkle towel with confectioners sugar; roll up.

7Roll inside it and cool completely.

8Unroll; spread with Cool Whip. Place bananas at end of roll; re-roll.
