  • 3/4 c. shortening
  • 3 c. sugar
  • 1/2 c. buttermilk
  • 3 c. flour
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 4 eggs
  • 4 large ripe bananas
  • 2 Tbsp. vanilla

    Cream shortening and sugar; add eggs and cream well.

    Combine flour, soda and salt together, then add flour mixture alternately with buttermilk to the shortening and sugar mixture.

    Mash banana and add to cake mixture.

    Last add cup of chopped pecans and vanilla.

    Bake in slow oven until top springs back when pressed. Bake at 325° for about 45 minutes. Bake in an angel food pan or a 12-cup Bundt pan.
