Banana-Nut Chip Bread

  • 1 1/2 c. mashed ripe bananas (about 3 medium)
  • 1 1/4 c. sugar
  • 3 eggs
  • 1/3 c. vegetable oil
  • 1 Tbsp. vanilla
  • 2 1/4 c. flour
  • 3/4 c. quick-cooking oats
  • 2 tsp. ground cinnamon
  • 1 tsp. each: baking powder, baking soda and salt
  • 1/4 tsp. ground nutmeg
  • 1 c. (6 oz.) semi-sweet chocolate chips
  • 3/4 c. chopped walnuts

Directions

    In a mixing bowl, beat bananas, sugar, eggs, oil and vanilla. Combine the dry ingredients; stir into banana mixture.

    Fold in chocolate chips and nuts.

    Pour into two greased 8 x 4 x 2-inch loaf pans.

    Bake at 350° for 55 minutes or until a toothpick inserted near the center comes out clean.

    Cool for 10 minutes before removing from pans to wire racks.
