- 1 large banana
- 2 c. chopped, toasted pecans
- 1 c. packed brown sugar
- 3 eggs, beaten
- 1/2 c. light corn syrup
- 1/4 c. melted butter
- 2 Tbsp. dark rum or 1 tsp. rum extract
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1 (9-inch) unbaked pie shell
Directions

1Mash half of the banana and cube the other half. Blend all the ingredients; pour into the pie shell. Bake at 375° for 45 minutes until crust is golden and filling is set. Let cool at least 2 hours before cutting.
