  • 1 large banana
  • 2 c. chopped, toasted pecans
  • 1 c. packed brown sugar
  • 3 eggs, beaten
  • 1/2 c. light corn syrup
  • 1/4 c. melted butter
  • 2 Tbsp. dark rum or 1 tsp. rum extract
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 (9-inch) unbaked pie shell

    Mash half of the banana and cube the other half. Blend all the ingredients; pour into the pie shell. Bake at 375° for 45 minutes until crust is golden and filling is set. Let cool at least 2 hours before cutting.
