- 1 egg
- 2-3/4 cups milk
- 1/3 cup granulated sugar
- 3 Tbsp. MINUTE Tapioca
- 1 tsp. vanilla
- 2 medium bananas, sliced
- 2 Tbsp. brown sugar
Directions

1Beat egg and milk with wire whisk in medium saucepan until well blended.

2Add granulated sugar and tapioca; stir until well blended.

3Let stand 5 min.

4Bring to full rolling boil on medium heat, stirring constantly.

5Remove from heat; stir in vanilla.

6Pour into shallow 1-qt.

8Cover with plastic wrap, placing wrap directly on surface of pudding.

9Refrigerate 2 hours or until completely cooled.

10(Pudding thickens as it cools.)

11Preheat broiler just before serving.

12Uncover pudding.

13Arrange banana slices in single layer over pudding.

14Sprinkle evenly with brown sugar.

15Broil, 3 inches from heat, 2 to 3 min, or until sugar is melted and caramelized.
