Banana Tea Bread

- 1 3/4 c. sifted flour
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. salt
- 1/3 c. shortening
- 2/3 c. sugar
- 2 eggs, well beaten
- 1 c. mashed, ripe bananas
Directions

1Sift together flour, baking powder, baking soda and salt. Beat shortening until creamy in mixing bowl.

2Add sugar gradually and continue beating until light and fluffy.

3Add eggs and beat well.

4Add bananas and beat well.

5Add flour mixture alternately with banana mixture (a small amount at a time) mixing after each addition only enough to moisten dry ingredients.

6Turn into a greased loaf pan (8 1/2 x 4 1/2 x 2 1/2-inches) and bake in a 350° oven for about 1 hour and 10 minutes or until bread is done. Makes 1 loaf.
