- 1 tablespoon unsalted butter (please don't use salted butter, it will ruin the recipe)
- 14 cup honey
- 4 teaspoons fresh lemon juice
- 1 teaspoon ground ginger
- 14 teaspoon fresh ground black pepper
- 12 cup madeira wine, preferably Malmsley
- 4 firm-ripe bananas, each peeled and cut into 8 pieces
- 8 scoops vanilla ice cream
Directions

1Melt the butter in a 10 or 12-inch skillet over low heat.

2Add the honey, lemon juice, nutmeg, ginger, and pepper.

3Stir until the honey liquifies and the ingredients are well blended.

4Add the Madeira, bring to a boil, and simmer for 5 minutes.

5Note: The recipe may be done ahead to this point.

6Reheat sauce before continuing.

7Add the banana pieces to the simmering sauce.

8Cook them, basting and turning, until they befin to soften, about 3 minutes.

9Meanwhile, place 2 scoops of ice cream in each of the 4 bowls or soup plates.

10Spoon the hot bananas and sauce over the ice cream and serve at once.
