Ingredients

  • 11 ounce Mixed fruit
  • 3 ounce Brown sugar Grated zest of 1 lemon
  • 13 fl ounce warm tea
  • 13 ounce Wholemeal plain flour
  • 2 tsp Mixed spice
  • 2 tsp Baking pwdr
  • 1 x Egg

Directions

    Place the fruit, sugar, lemon zest and tea in a bowl and soak overnight.

    Pre heat the oven to 190C.

    Grease and line a 1kg loaf tin.

    Strain the fruit and reserve the liquid.
  5. 5
    Put the remaining ingredients in a bowl and add in the fruit and sufficient of the liquid to make a soft consistency.

    Pour into the prepared tin.

    Bake for 45 min or possibly till well risen and hard.

    Cold and serve with butter, if you like.
