- 1 lb. pared Idaho potatoes, cut into 1/2-inch strips
- 1 Tbsp. vegetable oil
- 1 1/2 Tbsp. tomato paste
- 1 1/2 Tbsp. cider vinegar
- 1 1/2 Tbsp. chili powder
- 1/2 Tbsp. salt
Directions

1Preheat oven to 450°.

2Line baking sheet with foil.

3Spray with nonstick cooking spray.

4In medium bowl, combine potatoes, oil, tomato paste, vinegar, chili powder and salt.

5Toss well to thoroughly coat.

6Arrange potatoes in a single layer on baking sheet.

7Bake for 15 to 20 minutes.
