Barbecue Scallops

  • 1 can vegetarian scallops
  • 2 Tbsp. olive oil
  • 3/4 c. chopped onions
  • 1/2 c. green peppers, chopped
  • 2 Tbsp. onion powder
  • 3 cloves garlic
  • 1 c. tomato paste
  • 1 c. water
  • 1/4 c. ketchup

Directions

    Place oil in frying pan.

    Brown scallops, don't burn them. After browning, place in baking dish.

    With the oil that's left in pan, simmer onions, peppers and garlic until soft.

    Add tomato paste, water and ketchup.

    Simmer 5 minutes.

    Pour over scallops and bake 20 minutes at 350°.

    Serves 5 to 6.
