Barbecued Chicken

Ingredients

  • 1/4 c. salad oil
  • 1 (2 1/2 to 3 lb.) ready-to-cook broiler-fryer chicken
  • 1/2 c. chopped onions
  • 1/4 c. chopped celery
  • 1/2 c. catsup
  • 1/3 c. water
  • 2 Tbsp. lemon juice
  • 1 Tbsp. each: brown sugar, Worcestershire sauce, vinegar and prepared mustard

    In a skillet, brown slowly in oil the chicken.

    To skillet, add onions and celery; cook until tender.

    Add catsup, water, lemon juice, brown sugar, Worcestershire sauce, vinegar and mustard.

    Simmer 15 minutes; skim off excess fat.

    Pour sauce over chicken.

    Bake uncovered at 325° for 1 1/4 hours or until done, basting 3 or 4 times.
