  • 2 large fresh Rock Cornish Game hens or if frozen, thawed
  • salad oil
  • 1/4 c. orange marmalade
  • 1/4 c. butter or margarine
  • 2 Tbsp. teriyaki sauce
  • citrus leaves, watercress or celery tops for garnish
  • orange wedges for garnish

    Remove giblets and neck from hens (save for other use).

    Cut each hen in half with shears or a boning knife.

    Rub skin with oil.

    Place hens on barbecue grill over medium-hot coals, cooking for 25 to 35 minutes, turning frequently.
