Barbecued Garlic Shrimp Recipe

- 1 1/4 c. Unsalted butter
- 12 x Green onions, minced
- 15 x Garlic cloves, chopped
- 2 c. Dry white wine
- 6 Tbsp. Fresh lemon juice
- 1 1/2 lb Large unpeeled shrimp
- 1 c. Plus 3 Tbsp chopped fresh parsley Bamboo skewers, soaked in water 30 min Warm pepper sauce, (such as Tabasco)
- 3 Tbsp. Chopped green onion tops Lemon wedges
Directions

1Heat butter in heavy large skillet over medium-low heat.

2Add in 12 minced green onions and garlic and saute/fry 3 min.

3Add in white wine and simmer 15 min, stirring occasionally.

4Fold in fresh lemon juice.

5Season to taste with pepper.

6Transfer to large bowl and let cold.

7Cut shrimp down back through shell; don't peel.

8Remove veins.

9Add in shrimp and 1 c. parsley to garlic mix and toss well.

11Prepare barbecue (medium-high heat).

12Remove shrimp from marinade.

13Thread 2 shrimp on each skewer.

14Transfer marinade to heavy medium saucepan.

15Simmer over medium heat till thick, stirring occasionally, about 12 min.

16Strain through a sieve, set over a bowl, pressing on solids.

17Season marinade with pepper sauce and salt.

18Spoon into 8 small ramekins; sprinkle with chopped onion and 3 Tbsp parsley.

19Place 1 ramekin on each plate.

20Place shrimp on grill and cook till just pink and cooked through, turning once, about 3 min.

21Divide shrimp among plates.

22Garnish with lemon wedges and serve.
