Baretta'S Squash Casserole

Ingredients

  • 6 medium squash, sliced
  • 1 carrot, grated
  • 8 oz. sour cream
  • 1 pkg. Pepperidge Farm mushroom and onion flavor stuffing
  • 2 cans cream of mushroom soup
  • 1/2 can chicken broth (small)
  • 1 small chopped onion

Directions

    Boil onion and squash together until tender.

    Drain and mash slightly.

    Set aside.

    Grate carrot and mix with sour cream, 1/2 bag of stuffing, stuffing seasoning, soup and chicken broth.

    Add squash and mix together.

    Add margarine to remaining stuffing; microwave and mix together.

    Add to top of casserole.

    Bake 30 to 35 minutes at 350°.
