Ingredients
- 4 1/2 tsp Dry yeast
- 2 c. Hot water
- 2 Tbsp. Honey
- 2 c. Barley flour
- 2 c. Wholewheat flour
- 2 c. Unbleached white flour
- 2 Tbsp. Extra virgin olive oil
- 2 tsp Salt
Directions

1Dissolve yeast in hot water & place in large mixing bowl.

2Stir in honey & leave until yeast becomes foamy.

3Combine the three flours & add in half to the yeast.

4Beat with a wooden spoon for 10 min.

5The consistency should be of thick mud.

6Cover & set aside to rise for 1 hour, until the dough has doubled.

7Punch dough down & carefully mix in extra virgin olive oil, salt & 1/2 c remaining flour.

8Gradually mix in more flour until dough starts to come away from the sides of the bowl.

9Place dough on a lightly floured surface & knead well for 10 min.

10Add in more flour as necessary.

11Place dough in a lightly oiled mixing bowl.

12Cover & leave to double.

13Ounch dough down again & shape into 2 domed round loaves.

14Cut a cross in the centre.

15Place on an oiled baking sheet, cover & let rise until doubled, 45 to 60 min.

16Bake at 350F for 50 min.
