- 1 teaspoon sesame oil
- 1 medium onion, chopped
- 14 ounces chicken broth
- 1 cup barley (quick cooking)
- 10 ounces frozen peas and carrots, thawed
- 2 tablespoons chopped fresh parsley (optional)
Directions

1Heat oil over medium heat.

2Add onion; saute 3-5 minutes or until translucent.

3Raise heat; add broth and bring to a boil.

4Add barley; cover, lower heat and simmer 10 minutes.

5Remove from heat.

6Stir in veges.

7cover and let stand 5 minutes.

8Top with parsley just before serving.
