Barley Pilaf

  • 1 teaspoon sesame oil
  • 1 medium onion, chopped
  • 14 ounces chicken broth
  • 1 cup barley (quick cooking)
  • 10 ounces frozen peas and carrots, thawed
  • 2 tablespoons chopped fresh parsley (optional)

Directions

    Heat oil over medium heat.

    Add onion; saute 3-5 minutes or until translucent.

    Raise heat; add broth and bring to a boil.

    Add barley; cover, lower heat and simmer 10 minutes.

    Remove from heat.

    Stir in veges.

    cover and let stand 5 minutes.

    Top with parsley just before serving.
