  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 cup milk
  • 1 cup grated cheese (the milder, the better, try cheddar, mozzarella)

    Melt butter in saucepan.

    Stir in flour until blended.

    Stir in milk slowly.

    When the sauce has thickened, reduce heat and stir in cheese.
