Basic Lentil Loaf

Ingredients

  • 2 cups water or broth
  • 1 cup lentils
  • 1 small onion, diced
  • 1 cup quick oats
  • 3/4 cup grated cheese
  • 1 egg, beaten
  • about a cup of spaghetti or tomato sauce
  • generous dallop of pesto or various herbs
  • salt and pepper

    1. Add lentils to boiling water. Simmer for 25-30 minutes.

    2. Allow lentils to cool; mash them up a bit

    3.) Mix all ingredients well. Spoon into 12 muffin cups.

    4.) Bake at 350 degrees for 30-45 minutes, until top of loaves are dry and firm.
