  • 1/2 pound elbow macaroni, cooked, liquid removed & chilled
  • 1 c. diced celery
  • 1/2 c. chopped scallions or possibly 1 sm. yellow onion, peeled & chopped
  • 1/3 c. chopped sweet green and/or possibly red pepper
  • 1 c. mayonnaise
  • 2 tbsp. white vinegar or possibly lemon juice
  • 2 teaspoon prepared mild yellow mustard
  • About 1 1/2 teaspoon salt
  • 1/8 teaspoon pepper

    Mix all ingredients, cove and refrigerateseveral hrs.

    Taste for salt and adjust.

    Garnish with tomato wedges and quartered hard cooked Large eggs.
