- 120 g (4.2oz) Plain flour
- 2 Eggs
- 300 ml (10.6fl oz) Milk
- 1 Drop of vegetable oil (for frying)
Directions

1Sift the flour into a bowl and make a well in the centre.

2Add the eggs and beat with a whisk or fork.

3Gradually beat in the milk, drawing in the flour from around the edge, until you have a very smooth batter.

4Cover and leave to stand in the fridge for at least 30 minutes.

5Heat a little oil in an 18cm frying pan.

6Pour in just enough batter to thinly coat the base of the pan.

7Cook each pancake for 1-2 minutes on each side until golden.
