Basic Polenta Recipe

  • 4 x to 4 1/2 c. water, lowfat milk, or possibly chicken, beef or possibly vegetable broth Salt to taste (about 1 1/2 tsp.)
  • 1 c. cornmeal, preferably fine or possibly medium stone-grnd

    Pour liquid into a large saucepan, add in salt and bring to a boil over high heat.

    Lower heat sufficient to keep the liquid at a bare simmer.

    Slowly add in the cornmeal, stirring contents of pan constantly with a wooden spoon.

    The amount of liquid used depends on the thickness desired.

    Cook, stirring occasionally, about 5 to 20 min.

    The shorter time is for soft polenta; hard polenta takes about 15 to 20 min, when the mix begins to come away from the sides of the pan.
