Basic Texas Meat Loaf

Ingredients
- 1 pound lean ground beef
- 1/2 pound ground pork
- 2 eggs
- 1 cup milk
- 1/2 cup rolled oats
- 1/4 cup Worcestershire sauce
- 1/2 cup chopped canned tomatoes, drained
- 1/2 cup finely diced celery
- 1/2 cup finely diced onion
- 1/2 cup finely diced green pepper
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 1/2 teaspoons dried basil
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1 large clove garlic, minced
- Salt and pepper to taste
- 4 thick slices bacon
Directions

1Preheat oven to 425 degrees

2In a bowl, thoroughly combine the ground beef and pork.

3In a separate bowl, beat the eggs.

4Stir in the milk and oats.

5Pour into the meats.

6Mix thoroughly.

7Add Worcestershire sauce, tomatoes, celery, onion, green pepper, salt, pepper, herbs and garlic.

8Mix well.

9Form into oval loaf in a roasting pan.

10Sprinkle with salt and pepper to taste and lay the bacon lengthwise on top.

11Bake 50 minutes.
