Basil Parmesan Spread

Ingredients
- 1 pkg of frozen spinach (thawed and drained well to remove excess moisture)
- 1/4 cup olive oil
- 1 cup grated parmesan cheese
- 8 oz cream cheese
- 4 oz soft goat cheese
- 1/4 cup finely chopped walnuts
- 1/4 thinly sliced sun-dried tomatoes
- 3 or so fresh garlic cloves and/or garlic salt (I use fresh crushed garlic only)
- 1 cup fresh basil (you can use dried basil- a 1/2 cup or so)
- Pepper to taste.

11) Line a medium sized bowl with plastic wrap leaving a 4-inch overhang.

22) In food processor or blender combine spinach, olive oil, basil, garlic and parmesan cheese. Blend until almost smooth.

33)In a separate bowl mix the cream cheese and goat cheese until blended and smooth. (Mixing with fork will suffice.)

44) In the bowl lined with plastic wrap, layer, in thirds, the cheese mixture and spinach. Top with walnuts and sun-dried tomatoes. Repeat for additional layers. When you have used all of your ingredients, fold the edge of the plastic wrap over the cheese ball. Mold into a mound. Refrigerate for at least an hour or two before serving.
