Basil-Tomato Pie

  • 1 refrigerated unbaked pie crust
  • 1 1/2 c. shredded Mozzarella cheese
  • 5 Roma tomatoes
  • 1/4 c. dry basil or 1 c. fresh basil leaves, loosely packed
  • 4 cloves garlic
  • 1/2 c. mayonnaise
  • 1/4 c. grated Parmesan cheese
  • 1/8 tsp. ground white pepper

Directions

    Prebake pie crust according to directions.

    Remove from oven. Sprinkle with 1/2 cup Mozzarella cheese.

    Cool on a wire rack. Cut tomatoes into wedges; drain on paper towels.

    Arrange wedges atop melted cheese in pie shell.

    In a food processor bowl, combine basil and garlic; cover and process.

    Sprinkle over tomatoes.
