  • 2 cups basmati rice, cooked according to package instructions (white or brown)
  • 1/2 cup parmesan cheese, grated
  • 1 tablespoon dry basil
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt (optional)
  • 1-2 clove garlic, crushed
  • 1 (4 ounce) can black olives, sliced, drained
  • 3/4 cup sun-dried tomatoes, rehydrated andchopped
  • 1 tablespoon olive oil (optional
