- 1 cup Water
- 1 stick Unsalted Butter
- 1 Tablespoon Sugar
- 1/4 teaspoons Salt
- 1 cup All-purpose Flour
- 4 whole Eggs
- 1 teaspoon Vanilla
- 2 cups Vegetable Oil Or Shortening
- 1/2 cups Confectioners Sugar, For Dusting
Directions

1In a saucepan boil water, butter, granulated sugar, and salt. Reduce heat to low and whisk in flour.

2Allow dough to cook for about 2 minutes, stirring constantly, until dough is thoroughly combined. Remove from heat.

3Beat in each egg one at a time until dough is light and fluffy. Add vanilla.

4In a deep fryer or deep straight sided pan, heat 2-3 inches of shortening or oil to 370 degrees for frying. Use two teaspoons to scoop small balls of dough into the oil, cooking 2-3 minutes until golden brown, turning midway through.

5Use slotted spoon and transfer to paper towels to cool. Sprinkle with confectioners sugar and serve hot. Preferably with chicory coffee!
