  • 1 egg slightly beaten
  • 2/3 cup milk
  • 1 tablespoon oil Wesson
  • 1 cup flour sifted
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons seasoned salt
  • 1/4 teaspoon pepper
  • 3 pounds fryer chicken cut into pieces
  • oil for frying

    Combine egg and milk and oil in a bowl.

    In a separate bowl, sift together flour, baking powder, salt, and pepper. Add to milk mixture; beat until smooth.

    Dip pieces of chicken in batter; drain 5-10 minutes on rack.

    Fill Dutch oven 1/3 full with oil. Heat to 375 degrees. Cook chicken about 12 minutes. Drain.
