  • 3 whole eggplants
  • 1 c. milk
  • 2 eggs, beaten
  • 1 c. flour for dredging
  • 1 c. bread crumbs
  • oil for deep frying
  • 2 lb. medium shrimp
  • 1 1/2 Tbsp. salt
  • 6 dashes Tabasco sauce
  • 2 1/2 Tbsp. monosodium glutamate (m.s.g.)
  • 1 1/2 Tbsp. garlic powder
  • 2 c. butter, melted
  • 1/2 c. flour
  • 1 lb. fresh lump crab meat
  • 3 shallots, finely chopped
  • 6 large mushrooms, sliced
  • 1/2 c. white wine
  • 1 small jar oysters

    Peel eggplants.

    Cut in half lengthwise and hollow out insides, leaving a 3/4-inch thick wall.

    Combine milk with eggs to make an eggwash.

    Dust eggplant shells with flour.

    Dip in eggwash, roll in bread crumbs and deep-fry at 375° until golden brown.
