Bbq Chicken Delight

Ingredients

  • boneless, skinless chicken thighs
  • 2 teaspoons roasted garlic
  • 2 ounces ice wine reg. white will do but is not as sweet
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 orange freshly squeezed
  • 3 peppers fresh, any colour
  • 1 bunch green onion
  • 2 garlic cloves fresh
  • 20 whole fresh mushrooms
  • 3 tablespoons olive oil

Directions

    Cube chicken thighs into 1 inch pieces, place in bowl with roasted garlic, wine, olive oil, balsamic vinegar, orange juice. Stir all together and set in fridge for 2 hours. (Start next step with 30 minutes left)

    cube peppers into medium size pieces, add green onion, garlic cloves, mushrooms, place in bowl and drizzle with olive oil. Let sit 10 minutes.

    On a hot BBQ place chicken in a vegetable tray. Cook until pieces are warm but not cooked through, constantly turning. At this point add the peppers and continue to turn until chicken is cooked.

    Serve with rice, spuds, pasta....pretty much anything...we really enjoyed a fresh garden salad with ours.
