  • 1 lb. dried small white beans, rinsed and soaked
  • 6 c. chicken broth
  • 6 c. water
  • 2 1/2 c. diced carrots
  • 1 1/2 c. chopped onion
  • 1 1/2 c. diced celery
  • 1 (14 oz.) can tomatoes, drained and chopped (reserve juice)
  • 2 Tbsp. olive oil
  • pepper to taste
  • 3/4 tsp. salt (optional)
  • 1/4 tsp. hot pepper sauce

    Place drained beans, broth and water in a 4 to 5-quart saucepan.

    Bring to a boil.

    Reduce heat and boil gently, uncovered, 40 minutes.

    Skim foam off top.
