  • 1 lb. navy beans
  • 12 c. water
  • 1 red pepper pod
  • 2 bay leaves
  • ham bone
  • 3 tsp. salt
  • 2 c. finely sliced celery
  • 1 c. finely sliced carrots
  • 1 medium onion, diced
  • 2 c. slivered cooked ham

Directions

    Soak overnight navy beans.

    Drain and add water, red pepper pod, bay leaves and a ham bone.
  3. 3
    Bring to boil and reduce heat, cooking slowly for 2 1/2 hours.

    Discard ham bone, pepper pod and bay leaves and add remaining ingredients.
  5. 5
    Return to boil and reduce heat, cooking slowly for 1/2 hour.
