Bean Stuffed Peppers

  • 4 medium bell peppers
  • 1 (15 oz.) kidney beans, drained
  • 8 oz. shredded Monterey Jack cheese
  • 1/4 c. raisins
  • 1/4 c. salsa
  • 2 tsp. chili powder

Directions

    Cut stem from pepper; remove seeds and cut split in bottom. In a bowl, combine beans, cheese, raisins, salsa and chili powder. Stuff peppers with bean mixture.

    Place in an ovenproof dish. Bake at 350° for 35 to 45 minutes or until peppers are soft and cheese has melted.
