  • 1 lb. pinto beans
  • 1 lb. chopped green pepper
  • 1 1/2 Tbsp. salad oil
  • 1 1/2 lb. chopped onions
  • 2 cloves crushed garlic

Directions

    Cook beans as follows:

    Add 6 to 8 cups hot water.

    Bring to a boil 2 minutes.

    Set aside to soak 1 hour.

    Drain beans. Sort beans for any undesirable ones and discard them.

    Put all good beans in pot with 6 cups hot water.

    Boil gently with lid ajar until tender.
