- olive oil
- 2 cans chicken broth
- 1/4 stick pepperoni, sliced thinly and chopped up
- crushed red pepper
- 3 Tbsp. garlic, minced
- 1 large head escarole
- 1 can Great Northern beans, rinsed and drained
Directions

1Simmer escarole in water until cooked down.

2Drain.

3Saut garlic in hot oil.

4Add chicken broth, pepperoni and escarole. Simmer 1/2 hour.

5Add beans the last 5 minutes.

6Add crushed red pepper to taste.
