  • 2 c. brown sugar, packed
  • 1 c. margarine
  • 8 eggs, separated
  • 6 tsp. soda, dissolved in 6 Tbsp. buttermilk
  • 2 tsp. cinnamon
  • 2 tsp. nutmeg
  • 6 c. all-purpose flour
  • 1 c. orange juice
  • 2 lb. candied cherries
  • 1 lb. dates
  • 1 lb. candied mixed fruit
  • 1 1/2 lb. whole white raisins
  • 6 c. shelled nuts (pecans or walnuts)

    Cut up candied fruits, dates and nuts.

    Use white raisins whole.

    Cream butter and sugar.

    Add yolks of eggs.

    Sift together 4 cups flour with cinnamon and nutmeg.

    Add this to creamed mixture alternately with fruit juice and dissolved soda in buttermilk.

    Use the remaining 2 cups of flour to dredge the fruit and nuts.

    Pour batter over fruit mixture and mix.

    Beat egg whites and fold in last.

    Drop by teaspoonful on greased cookie sheet and bake for 25 to 30 minutes at 275°.
