Beef And Bean Wraps

  • 1 lb lean ground beef
  • 1 small onion - chopped
  • 2 ribs celery - chopped
  • 1/2 bell pepper - chopped
  • 1 C medium or hot salsa
  • 1 C black beans - drained (can use kidney or pinto beans)
  • 2 c shredded cheddar cheese
  • 8 flour tortillas - warmed

Directions

    In skillet, brown beef, drain any fat, stir in beans, salsa, veggies.

    Heat till veggies wilt but still crisp.

    Spoon about 1/2 c mixture down center of each tortilla, add about 2 Tbsp cheese.

    Fold tortilla around filling.

    Serve with additional salsa and cheese.
