- 1 lb. lean ground beef
- 3 large onions, sliced
- 1 Tbsp. butter or margarine
- 1 clove garlic, minced
- 3 c. beef stock
- 1 (16 oz.) can stewed tomatoes
- 2 c. diced potatoes
- 1 c. diced celery
- 1 c. diced green beans
- 1 c. diced carrots
- 1 c. dry red wine
- 2 Tbsp. chopped parsley
- 1/2 tsp. basil
- 1/4 tsp. thyme
- salt and pepper to taste
Directions

1In a large soup kettle, saute onion in butter until soft, but not browned.

2Add meat and garlic and cook until meat is brown. Drain off fat.

3Add all remaining ingredients.

4Bring soup to a boil.

5Lower heat and simmer 1 hour.
