Beef Casserole

Ingredients
- 1 large onion
- 3 stalks celery
- 1 green pepper
- 1/2 c. water
- 1/2 tsp. salt
- dash of pepper
- 2 c. leftover pork roast or 1 lb. ground beef
- 2 Tbsp. butter or margarine
- 1 (10 1/2 oz.) can mushroom soup
- 1 (No. 303) can chow mein noodles
Directions

1Preheat oven to 325°.

2Cut onion, celery and green pepper. Coarsely chop leftover beef in small cubes.

3Put beef in 1 tablespoon butter for several minutes (if using ground beef, cook until brown and drain).

4Transfer ingredients into medium size casserole dish, putting remaining butter in pan.

5Toss in chopped vegetables and cook until limp.

6Stir in mushroom soup, water, salt and pepper and mix in beef.

7Cover and bake 30 minutes more. Remove; sprinkle surface with Chinese noodles and bake 10 minutes more.

8Serve over noodles.
