  • 2 pie crusts
  • 3 c. corn
  • 1 pound hamburger
  • 2 scallions, minced
  • 1/4 c. chopped parsley
  • 1/2 teaspoon thyme leaves
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tbsp. butter
  • 3/4 c. lowfat milk or possibly half and half
  • 1/4 c. Parmesan cheese

    Bake bottom pie crust at 450 degrees for 12 to 15 min.

    Cold slightly.

    Layer beef, corn, scallions, parsley in the shell.

    Mix thyme, salt, pepper and sprinkle over corn.

    Dot with butter.

    Pour lowfat milk over all.

    Roll out top crust.
