Beef Enchilada Rice

- 1 lb. hamburger or turkey
- 1 onion, chopped
- 1 green pepper, chopped
- 2 c. cooked rice
- 1 pkg. dry enchilada spice mix
- 3/4 c. Pace picante sauce
- 3/4 c. tomato juice
- 1 c. shredded Cheddar cheese
Directions

1Brown meat, onion and green pepper together in a skillet until cooked, then drain well.

2Mix in a large bowl the rice, spices, picante sauce and tomato juice.

3Fold in the cooked meat mixture. Place in a greased casserole dish and bake in a 350° oven for 25 minutes.

4Remove from the oven and sprinkle the top with the cheese.

5Return to the oven and bake for 10 more minutes.
